
The Famous MAI TAI
4 oz. Trader Vic's Mai Tai Mix
2 oz. fine dark rum
juice of 1 fresh lime
Fill a double old fashioned glass with cubed ice and add the ingredients
above. Stir well and garnish with fresh mint sprig, pineapple spear,
cherry and slice of lime. Substitute 2 oz. of bourbon for the rum, and
you've made a HONI HONI.

Trader Vic Pau
1 1/2 oz. Trader Vic Mai Tai Mix
1/2 oz. Creme De Cacao
1/2 oz. evaporated milk
Shake with ice cubes. Strain into chilled lady cocktail glass.

Pinky Gonzales
4 oz. Trader Vic's
Mai Tai Mix
1 1/2 oz. tequila
Pour into mixing glass 3/4
filled with ice cubes. Shake
well, then pour into a
Mai Tai glass. Decorate
with mint sprig.

Tiki Pu (Non Alcoholic)
3 oz. of Trader Vic's
Mai Tai Mix
4 oz. lemon-lime soda
or sparkling soda
Fill glass with cracked ice and add ingredients. Stir and garnish with
mint sprig or slice of pineapple and serve.

Mai Tai Wine Punch
1 bottle (750ml) California dry white wine
1 bottle (750ml) of Trader Vic's Mai Tai Mix
In a 2 quart pitcher or bowl, stir and chill both ingredients with block
of ice or large pieces of ice. Decorate each serving with mint sprig,
pineapple spear and cherry. This is a quick, easy and very enjoyable
summertime cooler.

Mai Tai Punch (Non Alcoholic)
1 bottle (750ml) of Trader Vic's Mai Tai Mix
1 quart of orange juice
1 pint of lemon juice
1 quart of pineapple juice
1 quart of soda water or seltzer
Stir and chill with lots of ice in a punch bowl. Decorate each serving
with a sprig of mint. A great tasting punch for the kids. Serves
approximately 8-10 people.

Menehune Juice
4 oz. Trader Vic's Mai Tai Mix
2 oz. of fine light rum
juice of one lime
Fill a mai tai (double old-fashioned) glass with shaved ice. Add mix and
rum, and shake. Decorate with fresh mint, and fresh lime if you wish. (a
Menehune is a Hawaiian ³leprechaun²)

Piña Colada
4 oz. Trader Vic's Piña Colada Mix
1 oz. fine light rum
To a blender with 1 cup crushed ice add the above ingredients. Blend until
mixed. Pour into a cocktail glass and garnish with pineapple spear or
slice. For an extra creamy drink with a distinctive flavor, add ice cream;
vanilla, chocolate, coffee, etc. Substitute the ice cream for the rum to
create a refreshing
non-alcoholic drink.

Chi Chi
Substitute vodka for the rum in the piña colada recipe to create the
original Hawaiian cocktail.

Bahia (Non Alcoholic)
4 oz. of Trader Vic's
Piña Colada Mix
2 oz. lemon-lime soda
In a blender with 1 cup crushed ice add ingredients. Blend well and serve
in a glass with a fresh mint sprig.

Spicy Bloody Mary
4 oz. Trader Vic's Spicy Bloody Mary Mix
1 oz. vodka, gin or rum
Fill tall glass with ice and add ingredients. Garnish with celery stick or
wedge of lime.

Bloody Maria
4 oz. Trader Vic's
Spicy Bloody Mary Mix
1 oz. tequila
Fill tall glass with ice and add ingredients. If desired, first rim the
glass with salt. Garnish with celery stick or lime wedge.

Eye Opener (Non Alcoholic)
Serve plain Trader
Vic's Bloody Mary Mix over ice. Garnish with
a celery stick or
wedge of lime.

Hawaiian Daiquiri
4 oz. Trader Vic's Hawaiian Daiquiri Mix
1 oz. light rum
In a blender with 1 cup crushed ice add ingredients. Blend until almost
frozen but still liquid and serve in large champagne glass. Many enjoy
this drink "on-the-rocks". Just stir
together the above ingredients and
pour over cubed ice in a glass.

Hawaiian Highball
4 oz. Trader Vic's Hawaiian Daiquiri Mix
1 oz. vodka
Mix over cubed ice in a cocktail glass.
Add soda water and serve.

Daiquiri Swirl (Non Alcoholic)
Mix equal parts of grapefruit juice and Trader Vic's Hawaiian Daiquiri Mix
over cubed ice in a tall glass. Garnish with lime slice.

Traditional Margarita
4 parts Trader Vic's Margarita Mix
1 part tequila
Fill mixing glass with lots of cracked ice and add ingredients. Stir well
and strain into large cocktail glass rimmed with salt. To rim glass with
salt, dampen edge of glass with margarita mix or fresh lime and dip upside
down in a dish of salt. Serve with a fresh lime slice.

Frozen Margaritas
or Daiquiri's
Add the ingredients of the recipe in a blender with cracked ice. Blend
until it
has a slushy, almost frozen consistency. Serve in a
cocktail glass rimmed
with salt.

Strawberry Margarita
1 oz. tequila
4 oz. Trader Vic's Strawberry Margarita Mix
Fill large mixing glass with cracked ice and add ingredients. Stir
well and strain into large cocktail glass. For a more tart taste, use
1/4 oz. less Trader Vic's Strawberry Margarita Mix. If desired, pour over
ice cubes. Substitute 1 oz. of rum for tequila to make a STRAWBERRY
DAIQUIRI.

Virgin Margarita (Non Alcoholic)
3 oz. Trader Vic's Margarita Mix
3 oz. sparkling water
juice of 1 lime
Mix and pour into large glass with cubed ice.

Virgin Strawberry
Margarita
Substitute Trader Vic's Strawberry Margarita Mix in the above recipe and
delete the lime juice.

Passion Fruit Cocktail
1/2 oz. Trader Vic's Passion Fruit Syrup
juice of 1/2 lime
1 oz. gin or vodka
In a mixing glass with crushed ice, combine ingredients. Hand shake and
strain into chilled cocktail glass.

Passion Punch
1 1/2 oz. Trader Vic's Passion Fruit Syrup
juice of 1 lime
1 dash bitters
1/4 oz. brandy
2 oz. gin
Blend in electric drink mixer with 1 scoop shaved ice. Pour into
individual scorpion bowl. Add ice cubes. Decorate with a gardenia.

Queen Charlotte Fruit
Punch (Non Alcoholic)
1/2 oz. Trader Vic's Passion Fruit Syrup
1/4 oz. Trader Vic's Grenadine Syrup
1 oz. orange juice
1/2 oz. unsweetened pineapple juice
1/2 oz. lemon juice
club soda
Pour all ingredients except soda over ice cubes in a 10 ounce
pilsner glass. Fill glass with soda. Stir gently. Decorate with a
fruit stick and fresh mint.

Eastern Whiskey Sour
1 dash Trader Vic's Orgeat Syrup
1 dash Trader Vic's Rock Candy Syrup
1/2 orange
1/2 lemon
2 oz. bourbon
Squeeze orange and lemon juice over 1/2 scoop shaved ice in a 16 oz.
double old fashioned glass; drop spent shells into glass. Add orgeat, rock
candy syrup and bourbon. Fill glass with cracked ice, and shake. Decorate
with fresh mint sprig and a fruit stick.

Mahukona
1 dash Trader Vic's Rock Candy Syrup
2 dashes Angostura Bitters
1/2 oz. lemon juice
1/2 slice pineapple
1/2 oz. Triple Sec
1 oz. light Puerto Rican rum
Blend with 1/2 scoop shaved ice in electric drink mixer. Pour into a
10 oz. pilsner glass half filled with shaved ice. Decorate with fresh mint
and a fruit stick.

Foul Weather
1 oz. Trader Vic's Passion Fruit Syrup
1 dash Trader Vic's Rock Candy Syrup
1 oz. orange juice
1 oz. lemon juice
1 dash vanilla
1 oz. Jamaica rum
1 oz. light Puerto Rican rum
Pour all ingredients over ice in a tall highball glass. Stir well.
Decorate
with fresh mint and a fruit stick.

Piño Pepe
1 dash Trader Vic's Rock Candy Syrup
Juice of 1/2 lime
1/4 oz. lemon juice
2 oz. unsweetened pineapple juice
1/2 oz. Triple Sec
1 oz. vodka
1 oz. light Puerto Rican rum
Blend in electric mixer with 1 scoop shaved ice. Pour into hollowed-out
fresh baby pineapple or ceramic version. Add ice cubes. Serve with straws.

Tequila Sunrise
1 tsp. Trader Vic's Grenadine Syrup
1/2 fresh lime
1 1/2 oz. tequila
orange juice
Squeeze lime juice into tall glass filled with ice cubes, drop in the lime
shell.
Add tequila and grenadine. Fill glass with orange juice and stir.

Honolulu Lulu
1 tsp. Trader Vic's
Grenadine Syrup,
1/2 slice pineapple
1 1/2 oz. lemon juice
2 oz. light rum
Blend all with 12 oz. glass of shaved ice in blender until liquid is
semi-frozen. Serve in a stem cocktail glass.

Grenadine
Cocktail (Non Alcoholic)
Pour 1 tsp. Trader Vic's Grenadine Syrup over cracked ice in a tall glass.
Fill glass with lemon lime soda. Stir and serve with straw and a
maraschino cherry (this drink is also known as a ³Shirley Temple²).

Aku Aku
1 dash Trader Vic's Rock Candy Syrup
Juice of 1 lime
8 or 10 large fresh mint leaves
1/2 oz. peach liqueur
1 oz. Light Puerto Rican rum
12 oz. glass of shaved ice
Blend ingredients thoroughly in electric drink mixer. Serve in a Tiki stem
pearl glass or large cocktail glass.

Around the World
1 oz. Trader Vic's Orgeat Syrup
3 oz. orange juice
3 oz. lemon juice
3 oz. light Puerto Rican rum
1/2 oz. brandy
juice of 1/2 fresh lime.
Blend with 2 scoops of shaved ice for 12 to 15 seconds in electric drink
mixer. Pour into 2 grapefruit supreme glasses. Fill glasses with cracked
ice. Serve with straws. Makes 2 drinks.

Trader Vic Grog
1 oz. Trader Vic's Passion Fruit Syrup
1 dash Angostura bitters
1 oz. lemon juice
1 oz. unsweetened pineapple juice
2 oz. dark Jamaican rum
Pour into mixing glass filled with shaved ice. Shake. Pour into ten-pin
pilsner glass. Decorate with fresh mint, a cherry and a stirrer.

Mex Tex Cooler
1/4 oz. Trader Vic's
Ko-Ko Kreme Syrup
1 1/2 oz.
grapefruit juice
1 1/2 oz. tequila
Blend in electric mixer with 1 scoop crushed ice. Pour into tall glass.

Chi Chi
1/4 oz. Trader Vic's
Ko-Ko Kreme Syrup
2 oz. pineapple juice
2 oz. vodka
Blend in electric mixer with 1 scoop crushed ice. Pour into glass and
decor-ate with a fruit stick and fresh mint.

Samoan Fog Cutter
1/2 oz. Trader Vic's Orgeat Syrup
2 oz. light Puerto Rican rum
1 oz. brandy
1/2 oz. gin
2 oz. lemon juice
1 oz. orange juice
1 teaspoon Sweet Sherry
Shake all ingredients except sherry with ice cubes. Pour into a
14 ounce glass. Add more ice cubes. Float the sherry on top.
Serve with straws.

Scorpion
1 1/2 ozs. Trader Vic's Orgeat Syrup
6 oz. orange juice
4 oz. lemon juice
6 oz. light Puerto Rican rum
1 oz. brandy
Blend in electric drink mixer with 2 scoops shaved ice. Pour into large
scorpion bowl. Fill with ice cubes. Decorate with a gardenia. Serves 3 to
4.

Orange Orgeat Highball
1/4 oz. Trader Vic's Orgeat Syrup
3 oz. orange juice
1 1/2 oz light rum
Pour into tall, chilled cocktail glass with ice cubes.

Lemonade D'Orgeat
1 oz. Trader Vic's Orgeat Syrup
1/4 oz. Trader Vic's Rock Candy Syrup
1 1/2 oz. lemon juice
club soda
Pour into a highball glass with ice cubes. Fill glass with club soda.

White Stem
1 oz. Trader Vic's White Creme de Menthe Syrup
1 oz. Trader Vic's KoKo Kreme Syrup
1 oz. evaporated milk
1 oz. light Puerto Rican rum
Fill stem of hollow-stem champagne glass with white creme de menthe. Place
a maraschino cherry at top of stem. Now shake
in a mixing can of electric drink mixer (or in shaker can with
mixing glass) with ice cubes,
the KoKo Kreme, milk, and rum.
Strain into champagne glass.
Dust with grated nutmeg.

Harbor Light
1/2 oz. Trader Vic's White
Creme de Menthe Syrup
1/2 oz. vodka
Shake with ice cubes. Strain into chilled lady cocktail or other cocktail
glass.

White
Creme de Menthe and Soda (Non Alcoholic)
1 oz. Trader Vic's White Creme De Menthe Syrup
club soda
Add White Creme de Menthe to glass with ice cubes and
fill with club soda. Try this recipe with ice tea instead of soda for a
delicious mint tea.

Tom & Jerry
1 heaping tsp. Trader Vic's
Tom and Jerry Batter
1/2 oz. dark Jamaica rum
1/2 oz. brandy
Boiling water, hot coffee, or hot milk
Preheat a 6 ounce Tom and Jerry mug with hot water. Empty water and add
batter, rum, and brandy; and stir. Fill mug with boiling water, hot
coffee, or hot milk. Stir.

Skull & Bones
1 teaspoon Trader Vic's
Hot Buttered Rum Batter
2 whole cloves
1 oz. dark Jamaica rum
Hot water
Put cloves, batter, and rum in a mug. Fill mug with hot water. Decorate
with a cinnamon stick.

Northwest Passage
1 teaspoon Trader Vic's Hot Buttered Rum Batter
3 or 4 whole cloves
1 oz. 151 proof Demerara rum
boiling water
cinnamon stick
Put cloves, batter, and rum into a mug. Fill with boiling water. Stir
well. Add cinnamon stick.

Hot Buttered Rum
1 heaping tsp. Trader Vic's
Hot Buttered Rum Batter
1 1/2 ozs. light Puerto Rican rum
boiling water
Preheat mug with boiling water. Put batter into the mug,
and add rum. Fill mug with hot water. Stir well. Decorate with cinnamon
stick. Also very tasty with Brandy or
Bourbon instead of rum.

Coffee Grog
1 teaspoon Trader Vic's Hot Buttered Rum Batter
1 strip lemon peel
1 strip orange peel
1 1/2 ozs. light Puerto Rican rum
hot black coffee
1 oz. fresh cream
Put batter, lemon peel, orange peel, and rum into
pre-heated mug. Stir. Add cream. Fill the mug with coffee.

Trader Vic's Rock Candy
Syrup
Substitute for the sugar in recipes or to add
a touch of sweetness as you desire.
COLD DRINKS:
Use in Sangrias, slings, swizzles, punches, collins, rickeys,
juleps, and fizzes.
