et us take you on a culinary voyage through the tropical islands of the Caribbean, where eating and drinking are national pleasures that come second to none. As Columbus did before, we shall island-hop the West Indies and delight in the local delicacies whose colonial influences differ from island to island.

The Caribbean kitchen is above all eclectic, gathering its ingredients and cooking methods from Europe, Asia, Africa, joining them in happy association with its own native foods. Rum is the spirits of the Islands, with each country producing a number of this delightful sugar cane based liquor, and mixing it to there own customary needs and tastes.

Island Specialities
In our Caribbean Cookery and Drinkery Promotion, we feature only a small selection of some of the most favoured speciality drink and food dishes of the islands, and dedicate each one to its country of origin. Most of these recipes have been handed down through the generations, with there style of preparation having an informal, home-made feel, relying more on the overall look, feel and flavour of a dish than elaborate techniques and ingredients.
